Found this one in October. They are quite abundant around here.
The caps of these mushrooms become a spore-filled black liquid in a process called ‘deliquescence’. These are excellent edibles for beginner mushroom foragers because they are very easy to identify.
Many authors state that these should be eaten before they delicquese. However, the truth is that the black ink is also perfectly edible!
Here is a an article by Forager Chef about how to use delicquescing shaggy mane mushrooms to prepare an edible black puree that is similar in taste and consistency to the Mexican delicacy known as “huitlacoche”.
